Watermelon Slush Recipe - Healthy & Refreshing
We’re savoring the last days of summer and soaking up all the sunshine we can! After a recent BBQ with friends, I found myself with a massive bowl of leftover watermelon. We were heading out of town, and I knew it wouldn’t get eaten in time, so I froze it. That’s how this watermelon slush recipe was born—a refreshing and healthy treat that's perfect for these warm days. With only two ingredients, it's both simple and delicious!
Let me show you just how easy it is to whip up this refreshing summer treat!
Watermelon Slush Recipe
Ingredients:
- 1 Medium Sized, seedless, Watermelon
- 1 Tbs. Lime Juice
Directions:
- Cover a baking sheet with parchment paper.
- Cut your watermelon into cubes, roughly the size of ice cubes. Spread watermelon into an even layer on the baking sheet and place in the freezer.
- Once the watermelon is frozen (about 4-6 hours), place the watermelon into a blender with lime juice and blend until smooth. You may need to work in several batches depending on your blender size.
- You can enjoy it immediately or freeze again and enjoy it later. Or for a fun spin, you could put it into popsicle molds.
Recipe Tips:
- Starting with a sweet watermelon makes all of the difference! If you don't have a good ripe watermelon, you may want to add a sweetener like honey, maple syrup, or sugar.
- This recipe is perfect for leftover watermelon that may go to waste. Just freeze it until you're ready to blend it!
- You can refreeze the watermelon slush after you've blended everything, it scoops just like ice cream!
