Asparagus and Tomato Pasta Recipe 

Ingredients

  • 8 oz whole wheat pasta
  • 1 Tbsp. olive oil 
  • 1 Tbsp. minced garlic 
  • 1 pound fresh asparagus, cut into 1" pieces 
  • 1 cup grape tomatoes, halved
  • 2 small zucchini, diced 
  • Feta cheese
  • Pepper to taste 

Directions

  • Cook pasta according to package directions.
  • Heat oil in a large skillet over medium heat. Add asparagus and garlic. Cook for 5 minutes. 
  • Add zucchini and cook for 3-5 minutes until vegetables are tender and crisp. 
  • Add tomatoes and cook until tomatoes are heated through, about 2 minutes. 
  • Sprinkle with pepper and feta cheese. Serve on top of cooked pasta.
