Indulge in the Sweetness of Cinnamon Apricot Bread

Ingredients for Cinnamon Apricot Bread 

To make cinnamon Apricot bread you'll need the following ingredients: 

  • 2 eggs 
  • 1/4 cup oil (vegetable or canola)
  • 3/4 cup Greek yogurt 
  • 1 tsp. vanilla 
  • 1 tsp. cinnamon 
  • Pinch of ground ginger
  • 1 1/2-2 cups whole wheat flour 
  • 1/2 cup brown sugar, packed
  • 2 tsp. baking powder 
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 lb. apricots, diced 

Steps to Make Cinnamon Apricot Bread 

  • Preheat your oven to 350 degrees. Spray a 10x5 inch bread pan with non stick cooking spray and sprinkle it with flour. 
  • In a large bowl, beat the (2) eggs with a fork. 
  • Add the 1/4 cup of oil, 3/4 cup yogurt, 1 tsp. vanilla, 1 tsp. cinnamon and a pinch of ginger. Mix well. 
  • Add 1 1/2 cups flour, 1/2 cup packed brown sugar, 2 tsp baking powder, 1/2 tsp. baking soda, and 1/4 tsp. salt. Mix until combined (don't over mix).
  • The batter should be thick, but not lumpy. Add more flour if needed. 
  • Fold in the apricot chunks. Pour the batter into the bread pan. 
  • Bake for 45-50 minutes or until an inserted toothpick comes out clean. 

Side Notes 

*If you can't find fresh apricots at the grocery store, dried apricots will work just as well.

*You could also use dried apples, bananas, or cranberries instead of apricots (see Create a Quick Bread section below for more ideas).

Create Your Own Quick Bread 

Get creative and use your imagination, create your own quick bread! Just follow the outline below. 

STEPS DIRECTIONS
Step 1 In a liquid measuring cup, place 2 teaspoons lemon juice or vinegar, add milk to make 3/4 cup, let sit for 5 minutes. 
Step 2

In a large bowl, lightly beat 2 eggs with fork. Stir in 1/4 cup oil and the milk mixture from step 1. 

  • If creating a sweet bread, add 1 teaspoon of vanilla.
Step 3

Add flavor to your bowl. 2-4 teaspoons total. 

Options for a savory bread: thyme, sage, rosemary, parsley, chili powder, garlic powder. 

Options for a sweet bread: lemon zest, nutmeg, cinnamon, ginger, extracts such a lemon, almond, or coconut.  

Step 4 Add your dry ingredients
  • 1 2/3 cup whole wheat flour
  • 2/3 cup oatmeal
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons salt 
Step 5 Add extras (optional). 
  • 1/2 cup fruit (fresh, canned or dried) 
  • 1/2 cup vegetables (zucchini, shredded carrots, pumpkin puree)
  • 1/2 cup chopped nuts
  • 1/4 cup or less seeds (sunflower seeds, sesame seed, poppy seeds) 

Combine the ingredients in the order listed. Stir to incorporate ingredients, but do not over mix. Pour batter into greased loaf pan. Bake in a preheated oven at 350 degrees for 40-50 minutes, or until toothpick comes out clean. Cool slightly and remove pan. Slice to serve. Option: Bake in a muffin tin for 18-20 minutes.
