Green Goodness: The Best Spinach Mini Muffin Recipe

There is something so fun and magical about making green food around St. Patrick's Day. Spinach is a fantastic way to turn your foods green. It packs a nutritious punch, and often you can't even taste it! These spinach muffins are a perfect example. I have a very picky 3 year old who won't even look at vegetables, let alone eat them. But I had him make these with me, and he immediately at 4 of them! And I enjoyed quite a few of them myself. 

Let's dive into the ingredients! 

Green Muffin Ingredient Stars: Spinach & Oats

Let's first talk about the two real starts of this recipe: Spinach and Oats.

Spinach: Spinach is packed with vitamins and minerals that are essential for our bodies to stay healthy. It's loaded with nutrients like vitamin K, which helps our blood clot properly, and vitamin A, which supports healthy vision and immune function. Spinach also contains iron, which is important for carrying oxygen throughout our bodies and keeping our energy levels up. Plus, spinach is rich in fiber, which helps keep our digestive system happy and healthy.

Oats: Oats are a nutritious whole grain that provide our bodies with long-lasting energy. They're an excellent source of complex carbohydrates, which are our body's preferred fuel source. Oats also contain fiber, which helps us feel full and satisfied after eating, making them a great choice for a satisfying snack or breakfast. Additionally, oats are rich in important minerals like manganese, which helps support bone health, and selenium, which acts as an antioxidant to protect our cells from damage.

Spinach Muffins Recipe 

Ingredients: 

  • 2 cups fresh spinach
  • 1 cup old fashioned oats
  • 2 eggs
  • 1 banana
  • 1/3 C. honey
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips

Directions: 

  • Preheat oven to 350 degrees.
  • Blend spinach and oats until fine
  • Add eggs, banana, honey, baking powder, cinnamon and salt. Mix well.

  • Pour muffin batter into a mini muffin pan and top each muffin with a few chocolate chips.
  • Bake for 12 minutes, or until a toothpick comes clean.
