Peanut Butter Yogurt Pops - Perfect for a Hot Day

Frozen Peanut Butter Yogurt Popsicle Recipe
Ingredients:
- 1 cup vanilla Greek yogurt
- 1/4 cup peanut butter (creamy or chunky)
- 1 cup dark chocolate chips
- 1 tsp oil or butter
Directions:
- In a bowl, combine your Greek yogurt and peanut butter.
- Cover a cookie sheet, tray, or plate (make sure it will fit in your freezer!), with parchment paper.
- Spoon the yogurt-peanut butter mixture onto the parchment paper. Shape into circles.
- Add a plastic spoon, or wooden popsicle stick onto each circle. Top with a little more of your mixture. Then place in the freezer for 3-4 hours.
- Once they are frozen, in a microwave-safe bowl melt the chocolate chips with 1 tsp. of oil. Microwave in short 30-second increments, mixing between each set, until the chocolate is smooth and creamy.
You can use things on hand to customize your yogurt pops. I used some fresh raspberries from my neighbor's garden, some mixed nuts and some mini chocolate chips. I added them before freezing and they turned out really good! But if you prefer, you can just stick with the classic peanut butter and chocolate!
