Raspberry White Chocolate Muffin Recipe 


  • 3 large eggs
  • ½ cup unsweetened applesauce
  • ½ cup shredded zucchini
  • ½ cup skim or low-fat milk
  • ¼ cup maple syrup
  • 2 Tbsp. melted butter
  • 1 tsp. vanilla
  • 1/3 cup baking cocoa
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup whole-wheat flour
  • 1 cup fresh or frozen raspberries
  • ½ cup white chocolate chips


  • Preheat oven to 350°F. Spray muffin tin generously with nonstick cooking spray, or line with liners.
  • In a large bowl, whisk the eggs. Add applesauce, zucchini, milk, syrup, butter, and vanilla. Mix well.
  • Add dry ingredients and mix well. Fold in chocolate chips and raspberries.
  • Fill each muffin tin ¾ of the way full. Bake 18-20 minutes until a toothpick inserted comes out clean. Let cool before serving.
