Carrot Oat Muffin Recipe
Ingredients:
- 4 cups carrots, peeled and chopped into chunks
- 1 cup old fashioned oats
- 8 eggs
- 6 tsp. cinnamon
- 4 tsp. baking soda
- 4 tsp. vanilla extract
- 1 tsp. nutmeg
- 4 Tbsp. honey
Directions:
- Preheat oven to 350°. In a large pot, add carrots and cover with water. Bring to a boil and cook until carrots are soft, about 15 minutes. Carrots should be soft enough to smash with a spoon. Remove from heat and drain water.
- Place all ingredients in a large bowl and mix until smooth. Spray a muffin tin with nonstick cooking spray. Pour batter into muffin tin. Bake for 45-50 minutes, or until an inserted toothpick comes out clean.
