Blueberry Lemon Pancakes Recipe 

Ingredients

  • 2 cups whole wheat flour
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 2 medium lemons
  • ¾ cup low-fat milk
  • 1 cup plain Greek yogurt
  • 2 eggs
  • 2 Tbsp. honey
  • 1 tsp. vanilla extract

Directions

  • Zest the lemons. Set zest aside. Juice lemons until you have ¼ cup juice.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest. Set aside.
  • In a small bowl, mix together the lemon juice and milk. Set aside.
  • In a large bowl combine yogurt, eggs, honey, and vanilla. Mix until well combined. Whisk in the milk and lemon mixture until smooth.
  • Pour the dry ingredients into the wet ingredients. Mix until just combined.
  • Heat a skillet or griddle to medium heat. Spray with nonstick cooking spray.
  • Scoop portions of batter (about ¼ cup at a time) into the skillet or onto the griddle. Cook 2-3 minutes, flip pancake, and cook 2-3 minutes on other side.
