Autumn Carrot Muffin Sandwiches

Ingredients:
Muffin Recipe
- 2 room temp eggs
- 1 cup pumpkin puree
- 1/4 cup low fat milk
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/2 tsp salt
- 1/3 cup olive oil
- 1/2 cup honey or sugar
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1.75 cups whole wheat flour
- 1/3 cup rolled oats
Filling
- 1/4 cup vanilla low fat Greek yogurt
- 1/4 cup sugar
- 1 tsp vanilla extract
- 8 oz block of low-fat cream cheese
- 1/2 cup chopped pumpkin seed
Directions:
- Preheat oven to 325F. In a large bowl, mix the oil, honey (or sugar), egg, pumpkin puree, milk, spices, vanilla, salt and baking soda.
- Combine the flour and oats into the wet mixture and mix till just incorporated.
- Spray a muffin tin with nonstick spray and fill evenly with batter. Bake for 22-25 minutes until a knife comes out clean after inserting into a muffin.
- Whisk the filling ingredients in a bowl with a hand mixer, whisk, or fork till the filling is fluffy. Add chopped pumpkin seeds and fold into the filling.
- Take muffins out of the tin and let them cool on a cooling rack or on a cool surface.
- Split the muffins in half and spread cream cheese filling inside the two halves. Enjoy!
