Ingredients: 

  • 12 mini whole wheat tortillas, or 6 regular whole wheat tortillas 
  • 1 large can of fully cooked, low fat chicken breast 
  • 2 roma tomatoes 
  • 1/2 a yellow onion 
  • 1 can of low fat, low sodium refried beans 
  • 1/2 cup of cilantro 
  • 1 cup Mexican blend cheese 
  • 1 tsp salt 
  • 1 tsp cracked black pepper 
  • 2 T lemon juice 

Directions: 

  1. Preheat the oven to 300F. Drain the chicken, dice the tomato and onion, and finely chop cilantro.
  2. Mix the canned chicken, tomatoes, onion, refried beans, cilantro, cheese, salt, pepper and lemon in a large bowl. 
  3. Spray a baking sheet with nonstick cooking spray. Fill the tortillas with filling and fold them into quesadillas. Add them to the baking sheet. 
  4. Bake for 10 minutes, or until the tortillas become crispy.
