Baked Spring Rolls

We're here wishing for warmer spring days... which leads us to a wonderful idea. Let's make spring rolls! 

Spring rolls are fun to make as a family, and there are a few different steps that can ensure everyone that wants to help in the kitchen has a job to do.

Spring rolls are often deep fried if you get them from a cafe or restaurant, because it’s a quick way to cook them, but deep frying foods like spring rolls at home can be a bit more work than most people want to do, plus it adds extra fat where you don’t really need it. Baking is going to still give your spring rolls a crispy and golden crust, without the added fat!

There aren’t any rules that say what you have to put into your spring rolls, and that means you can create your very own spring rolls recipe! Captain Create has one for you to try, but feel free to switch out ingredients in the filling that you either have at home, or don’t like to eat.

Try out this easy recipe, and then find out what happens if you change some of the filling ingredients! You can make them spicy inside, add different meats, or make them vegetarian, or even really change it up and make them into pizza-filled or taco-filled spring rolls.

Ingredients for Baked Spring Rolls

Here is what you need to make your own baked spring rolls: 

  • 1 cup chopped mushrooms
  • 4-6 cups spring salad greens
  • 2 green onions, chopped
  • 1 can sliced bamboo shoots, drained
  • 1 cup diced chicken
  • 2 Tbsp. cornstarch 
  • 2 Tbsp. reduced sodium soy sauce 
  • 1/2 tsp salt
  • 1/2 tsp sugar 
  • Ground ginger to taste 
  • 2 Tbsp. canola oil 
  • 1 package egg roll wrappers 

Recipe Steps

  • Start by cooking your chicken in 1 Tbsp. of oil. Sprinkle the chicken with a little ground ginger. 
  • Add your vegetables and cook until tender. 
  • Mix together the cornstarch and soy sauce. Add mixture to the vegetables and season with sugar and salt. 
  • Cook until the sauce has thickened.
  • Remove from heat and allow to cook before filling the egg roll wrappers. 
  • Fill the egg roll wrappers and use a skewer or toothpick to help keep them closed if needed. 
  • Place spring rolls on a baking sheet and lightly brush them with the remaining oil. 
  • Bake at 425 degrees for 5-6 minutes. Then turn the rolls and bake for another 5-6 minutes until the rolls become golden brown and crisp.
