3 Jicama Recipes That Are Delicious, Nutritious and Easy to Make
Do you like food with a little crunch? If so, Jicama is the perfect recipe add-in. It may not be pretty on the outside, but it's the inside that counts. It is mild in flavor, crisp, and crunchy. Its texture has been compared to a cross between a potato and a water chestnut. You can eat it fresh, like in a salad or on a veggie try, or you can roast it or cook it with other veggies in a stir fry. It's the perfect addition to a slaw recipe or chopped in fresh salsa.

Jicama Berry Salsa
Ingredients:
- 1 cup fresh blueberries
- 1 cup strawberries, diced
- 1 cup Jicama, diced
- 1/3 cup cilantro, chopped
- ¼ cup red onion, finely chopped ½ jalapeño, seeded and finely chopped
- Juice of 1 large lime
- Salt and black pepper to taste
Directions:
Combine all ingredients in a large bowl. Mix well. Serve with tortilla chips, on top of a bed of rice, rolled up in a whole wheat tortilla, or on top of grilled chicken.
Jicama Fries
Ingredients:
- 1 Jicama
- 1 lime, juiced
- Salt to taste
Directions:
- Peel away the skin of the Jicama with a potato peeler or knife. Cut the Jicama into french fry shapes.
- Sprinkle your Jicama fries with salt and lime juice to taste.
- Enjoy!
Jicama and Orange Salad
Ingredients:
- 2 cups Jicama, chopped or sliced
- 6 mandarin oranges*
- 2 avocados, sliced
- 2 Tbsp. lime juice
- Tbsp. cider vinegar
- Tbsp. canola or olive oil
- 1/8 tsp. cayenne pepper
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- ¼ cup chopped cilantro
*2 (10.5 oz.) cans mandarin oranges or 2 large navel oranges may be used in place of fresh mandarin oranges
Directions:
In a large bowl, whisk lime juice, cider vinegar, oil, cayenne pepper, salt, and pepper. Add the Jicama and let stand for 10 minutes. Fold in the mandarin oranges, avocado, feta, and cilantro; serve.
