Curried Chicken Salad Sandwich

Most store-bought chicken salads have lots of mayonnaise, making them high in calories. This low-calorie alternative is made with plain Greek yogurt. You won’t even be able to tell the difference!
Ingredients
- 1 lb. cooked chicken
- 1 cup plain Greek yogurt
- ½ cup dried cranberries
- 1 cup shredded carrots
- 1 stalk celery
- ½ cup natural, unsalted cashews
- ½ tsp. minced garlic
- 2 tbsp. lemon juice
- 1 ½ tbsp. curry powder
- ½ tsp. cumin
- ½ tsp. salt
- 1/8 teaspoon cayenne pepper (optional)
- Whole wheat bread or rolls
Directions
1. Prepare the ingredients
- Shred chicken.
- Chop celery and cashews.
- Mince garlic.
- Grate carrots.
2. Combine dry ingredients
- Combine shredded chicken, dried cranberries, shredded carrots, celery, and cashews.
3. Combine spices and wet ingredients
- Combine Greek yogurt, minced garlic, lemon juice, curry powder, cumin, salt, and cayenne pepper (optional).
4. Mix all ingredients
- Mix wet ingredients into the bowl of dry ingredients.
5. Place salad onto a sandwich
- Put a hearty scoop of salad onto the whole wheat bread or rolls.
