From Volunteer to Advocate: A Chef's Journey with the Utah Food Security Council

When Kurt Clodfelter, a retired chef with a passion for community service, first attended a Utah Food Security Council meeting, he had no idea how profoundly it would impact his life and his community. Kurt’s journey began as a dedicated volunteer who attended every meeting, including sub-committee meetings, where his input was invaluable. With his extensive culinary background, he provided unique insights into the preparation and nutritional value of local food products, helping to shape innovative strategies to combat food insecurity in Utah.

Evolution of the Utah Food Security Council: A Collaborative Win

In just two years, the Utah Food Security Council has evolved from a newly formed group into a powerful collective driving meaningful change across the state. This remarkable transformation is highlighted by the establishment of seven dynamic sub-committees: Policy, Mapping, Communications, Homelessness, Food Recovery, Evaluation, and Local Food. Each sub-committee is dedicated to addressing specific facets of food insecurity, leveraging the diverse expertise and passion of its members to create targeted solutions.

The Power of Passion & Commitment in the Utah Food Security Council

The Utah Food Security Council has become a cornerstone of hope and collaboration, drawing in a remarkable array of dedicated individuals and organizations committed to tackling food insecurity. Although the council is officially comprised of 15 members and one coordinator, the absolute passion for the cause has resulted in an average attendance of 40-45 people at every meeting. This exceptional turnout is a witness to the collective commitment to making a difference.

In an effort to enhance accessibility and outreach, the Utah Food Security Council launched a comprehensive website, marking a significant milestone in their mission to address food insecurity. This new online platform serves as a central hub for community resources, providing valuable information to those in need and those looking to contribute to the cause.
