Ingredients
- 8 oz whole wheat pasta
- 1 1/2 Tbsp olive oil
- 1 lb. boneless skinless chicken breast cut into strips
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp minced garlic
- 1/2 cup apple cider vinegar
- Zest and juice of 2 lemons
- 5-6 cups fresh baby spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat oil in a large skillet over medium heat.
- Add chicken, salt, and pepper to the skillet. Cook, stirring occasionally, until just cooked through. 5-7 minutes or until internal temperature reaches 165 degrees F.
- Add garlic and cook until fragrant, about one minute. Stir in vinegar, lemon zest, and lemon juice; bring to a simmer. Remove from heat.
- Add cooked pasta and spinach to the skillet and stir.
- Cover and let stand until spinach is just wilted.
- Top with Parmesan cheese and serve.
