Ingredients
- 1/2 large ripe cantaloupe
- 3/4 cup red bell pepper, finely diced
- 1/4 cup cilantro, chopped
- 3 Tbsp diced green onions
- 2 Tbsp fresh lime juice
- pinch of salt
- pinch of red pepper flakes
Instructions
- Remove seeds and rind of cantaloupe. Chop cantaloupe into very small pieces.
- Add cantaloupe, diced red pepper, cilantro, green onions, and lime juice to a large bowl. Stir.
- Add salt and pepper flakes and stir.
- Chill
- Serve with grilled chicken, fish, or steaks.
