Ingredients

  • 1/2 large ripe cantaloupe
  • 3/4 cup red bell pepper, finely diced
  • 1/4 cup cilantro, chopped
  • 3 Tbsp diced green onions
  • 2 Tbsp fresh lime juice
  • pinch of salt
  • pinch of red pepper flakes

Instructions

  1. Remove seeds and rind of cantaloupe. Chop cantaloupe into very small pieces.
  2. Add cantaloupe, diced red pepper, cilantro, green onions, and lime juice to a large bowl. Stir.
  3. Add salt and pepper flakes and stir.
  4. Chill
  5. Serve with grilled chicken, fish, or steaks.
