VARIETIES:  Most varieties do well in Utah. Detroit Dark Red, Early Wonder, Green Leaf, Golden and Red Ace are a few that are commonly available.

 

CULTIVATION:

Soil Preparation:

Beets grow in well-drained soils. Have garden soil tested to see what additions, if any, may be needed. Organic matter and an all-purpose fertilizer are usually sufficient. Heavy soils should be amended with compost for optimal growing conditions. For more information on soil testing, click here 

Planting:

  • Sow seeds after soil temperatures reach 40°.
  • For continuous harvest, plant seed every 2-3 weeks until June and again in August.
  • Plant seeds ½-1 inch deep, 3-4 inches apart in rows that are 12 inches apart.

 

Irrigation: Beets require regular watering. Crusting soils will limit seedling emergence and affect plant stands. For more information on watering, click here

 

Fertilization: Apply a nitrogen-based fertilizer 6 weeks after emergence to encourage rapid plant growth. Beets require adequate amounts of boron to develop properly. Black, sunken spots on or in the root generally indicate low boron levels in the soil. Amend if needed. For more information on fertilizing, click here

 

Harvest: Generally, beets are mature and ready to harvest 60-80 days from seeding, depending on variety. Young leaves may be cooked and eaten as well. Harvest beet leaves when they are 4-6 inches tall. Beets should be harvested before heavy frosts or freezes.
