American bistort is one of the most common plants in mountain meadows and other moist areas in Utah and much of the west.
The plants are 1 – 2 feet tall, with white or pink clusters of small flowers at the end of the stem.
Wildlife an livestock feed on American bistort, although its food value varies from area to area, depending on local conditions.

Local Indians used the roots in soups and stews. The roots were also used for medicinal purposes.
