Ann Woodbury, USU Ext Family and Consumer Science Hotline specialist and Master Preserver will bring her experience and expertise as she shares the latest canning methods for safe processing. Organic foods are increasing in popularity and availability. This class will cover what classifies a food as “organic”, why would this be important, and which organic foods may be worth your money. Topics such as food additives and preservatives will be covered as well. Taste testing will be a part of the class so you can determine whether organic foods actually do taste better! This class will cover the latest research on sports supplements including energy bars, goos, and sports drinks. An exercise program to gear up for a 5K will also be discussed. Get excited to work out, especially with the summer weather swinging in. Class was held 5/23/07.

A search on the internet will bring up 1000s of sites all touting to provide the miracle diet that will finally help keep the pounds off. Chocolate lovers were ecstatic to learn that chocolate may actually aid in reducing cholesterol or improving cardiovascular function. However, whether or not chocolate is a "health food" is entirely dependent on the type. Following the presentation, fruit and dessert items will be available for dipping. Class held 02/08/07.
Herbs are natural, but are they always safe? What are the regulations for herbal supplements? These questions will be addressed along with a discussion on some of the most popular herbs, their side effects, and their efficacy. Ginkgo Biloba, St. John's Wort, Ginseng, Garlic, Echinacea. Many consumers are interested in nutritional supplements because of what they claim to do, whether that is to slow the progression of disease, to increase muscle mass, or to lower cholesterol. This class will review the scientific literature relating to the best selling supplements: Glucosamine, CoEnzyme Q 10, Melatonin, Amino Acids, and Omega 3 Fatty Acids. Class held 01/04/07.
