Question

Q

Is it possible to make a freezer-jam marmalade? I want to make my own, but don't have the supplies for actual canning.

Answer(s)

A

Marmalade, by definition, is a citrus preserve. Preserves are typically not hard set like a jelly. You certainly can use freezer jam pectin for any jam or jelly (including marmalade). However, I have not seen any recipe for marmalade using freezer jam pectin. Unfortunately, you will have to experiment a little with the quantity of pectin used based on your recipe. The more acid in citrus tends to make a firmer gel. You can also freeze regular made marmalade that didn't use freezer jam pectin. But those recipes need to be boiled to dissolve the pectin. Boiling water will preserve any jam, all you need is boiling water 1 inch over the jar top. Boil for 10-15 minutes. That's all.
