Question
I canned cucumbers (not using a brine, but a recipe that completed within the day). They do not taste like they have enough dill. This was about a year ago. Can I open the pickled cucumbers and add more dill then reseal the jars? If so are there any points I should follow? Otherwise, are my pickles just ruined? Thanks

It is not recommended to reprocess canned foods. If you reprocess pickles they will lose a lot of crispy texture. Instead, add the dill when you open the individual jar. Pour off the brine into a pot, add dill, boil to extract the dill flavor, cool brine, and return brine to pickles. It may take a few days or more for the pickles to absorb the dill flavor. Once opened, always keep the jar in the refrigerator. You can also try to just add fresh dill to the opened jar. Close it and store in the refrigerator. Sample pickles over time until they have a better dill flavor. If the brine is not too salty, you can add a little extra salt. This will cause the pickle juices to come out of the pickle and allow dill flavored brine to take its place.
