Refrigeration is a modern food preservation method.  It relies on the fact that dangerous foodborne illness bacteria do not grow (or grow very slowly) at refrigeration temperatures (40-41 degrees F or below).  Refrigeration is a temporary food preservation method because many food spoilage microorganisms and food spoilage enzymes can still slowly proliferate.
