This month�s site contains the �Bible� of the dairy industry. It is the site that includes a copy of the Grade �A� Pasteurized Milk Ordinance (PMO). Every inspection that you have on your dairy for sanitation and milk quality can be traced, all or in part, back to the PMO. It�s not exactly light reading, but if you sell milk you should be familiar with the rules and regulations governing how you collect and handle that milk. In addition to the PMO itself, at the end of the PMO there is also a link to a site called �Milk Safety References.� This site lists interpretation and/or clarification memorandums on different aspects of the PMO and actions taken at the last National Conference on Interstate Milk Shipments meeting where the PMO rules were discussed, as well as other miscellaneous sites. Hopefully, no one will have problems with the rules, but if you should, it pays to know where to look to understand what is required.
