4-H and FFA livestock programs provide a unique educational experience for youth development. In Utah, 4-H and FFA youth livestock projects produce livestock including beef, pork and lamb with a commercial market value of more than $1 million per year. Youth must realize that they are not just raising a project for the county fair; they are in the business of producing a food product for the consumer. Youth need to understand their relationship as beef producers to the consumer who purchases this product. It stresses that youth who are raising project beef for the retail market improve the quality of their beef product by reducing the frequency of producer-caused carcass quality problems and ensure that best management practices are followed. Specifically, it discusses:
  1. Daily Care and Management
  2. Prevention
  3. Handling
  4. Carcass Quality
  5. Health Care

This is an excellent resource for 4-H club leaders, FFA advisors, and extension agents.
